These crunchy, golden-brown beans are eaten like peanuts or roasted pumpkin seeds.
- 1/4 lb peeled dried fava beans
- Salt
- Oil for deep frying
- Wash the beans and leave to soak for 8 hours in plenty of water.
- Remove any floating debris, drain the beans, peel them if necessary, roll them in salt, then dry with paper towels.
- Heat oil in a deep-fat fryer until quite hot. Use a large slotted spoon to lower the beans, a few at a time, very slowly into the hot oil. Fry each batch until golden brown. Drain on paper towels and eat cold.Garbanzo beans can be deep fried and eaten in exactly the same way.
